Eric used to meet me at an undisclosed location at 6 or 7am. For the next four or five hours we would run the still, sip morning rum and hope it all wouldn’t explode (for the record it never even got close). You can read about the early times here.
When you start a new hobby, or skill, it is rare that you know where it will lead you, which exactly the point. This week, I found out where it led Eric and it is a pretty exciting place.
I got the Skype call late at night from Dubai. Eric had reached the finals of a Bacardi competition with a cocktail he created called El Vestido or The Dress. As a celebration we decided to make a couple up last night:
45 ml (1 1/2 oz) Bacardi Superior
7.5 ml (1/4 oz) Fino Sherry
22.5 ml (3/4 oz) Raspberry syrup
22.5 ml (3/4 oz) Lime juice
15 ml (1/2 oz) Egg white
Several mint leaves
Dry shake then add mint and ice, shake, and fine strain into a coupe.*

*Arbor Mist may also work if you don’t find a top shelf Sherry at 7-11, oh and raspberry jam that might work too.
